Mediterranean Stew
Ingredients
- 2 tablespoon olive oil
- 2 big onions
- 3 garlic cloves
- 1 fennel
- 2 big carrots
- 1 zucchini
- 4 potatoes
- 4 tomatoes
- 6 small bell peppers
- 1 can of peeled tomatoes
- 2 sprigs of rosemary
- 1 bunch of parsley
- 2 Juice PLUS+ Complete Vegetable Soups
- Salt & pepper to taste
- 1 tablespoon paprika powder
- 0.3l water
Preparation
Cut all vegetables into small pieces
Heat olive oil in a pan and fry onions and garlic
Add potatoes, carrots, fennel, zucchini, peppers and tomatoes, then salt and pepper to taste.
When everything is nicely browned add Juice PLUS+ Complete Vegetable Soup and peeled tomatoes
Stir in water
Flavour with paprika powder and add rosemary sprigs
Add parsley and then let everything cook for 30 min.
Before serving take out rosemary sprigs and garnish with the rest of chopped parsley
